Strawberry Cheesecake

My husband loves cheesecake so I made him a strawberry cheesecake today.
For the base: 125g digestive biscuits, crushed (I used the end of a rolling pin)
Melt 85g butter and mix with the crushed up biscuit. Place into a cake tin or similar and level out.
Next mix 200g cream cheese (49p Lidl), 1 tsp vanilla extract and 60g sugar together well.

Separately whisk 250ml double cream (69p Lidl), then add to the other bowl with the cream cheese etc in.

Spoon on top of the biscuit base and smooth over. Place in fridge for about an hour to set.
After an hour (you could do this straight away if you wanted instead of letting it set a bit) take out of the fridge for decorating. I cut strawberries in half to put round the outside of the cheesecake, then randomly cut up some more strawberries to place in the middle. I cut up about 5 strawberries, a heaped tablespoon of strawberry jam and heated it up in the microwave to drizzle over. I think this is mostly done using gelatine but I didn't have any!


Et voila! Delicious cheesecake.
We had a letter through today saying that our council tax is increasing - by £3 a month - not a lot but as we know, every little bit adds up! The cost of living is rising and I will do my best to counteract this xx
