Today was a horrible day weather-wise so it was a day spent inside catching up with the cleaning, washing clothes, ironing and play time with my little girl.
For lunch I made pizzas (with help, see photo!) from Jack Monroe's recipe which is as follows:
250g plain flour, plus extra to knead the dough
a 7g sachet of fast-acting dried yeast
1 tablespoon oil, plus extra to oil the baking tray
200ml warm water
tomato purée to cover the pizzas
Measure the flour and yeast into a large mixing bowl. Make a well in the centre of the flour, add the oil and most of the water, and stir together with a spoon to make a soft, sticky dough.
Tip the dough on to a floured work surface, lightly knead for a few minutes and shape into a round. Pop it back into the mixing bowl, cover with cling film or a clean tea towel and leave for an hour to rise, or until doubled in size.
When the dough has risen, tip out on to the floured work surface and roll out with a rolling pin.
Cut out shapes using your choice of cutter, transferring these mini pizza bases on to a lightly oiled baking tray as you go.
Preheat the oven to 180°C/350°F/gas 4. Top each dough pizza base with a thin spread of tomato purée and your topping of choice. Pop the baking tray into the oven for 10 minutes, until the mini pizzas are slightly crisp around the edges. Larger pizzas may need longer cooking time.
We just did cheese & tomato pizzas but any toppings would be nice! They were very tasty.
This evening I made chilli with rice for myself and my hubs (daughter had leftover roast dinner, I added gravy so it wouldn't be dry after being heated up), the mince is £1.75 for 500g from Lidl and is the nicest cheap one that I have tried. My husband is a very very fussy eater (he didn't have cheese on his chilli!) but chilli is a dish that he loves and isn't very expensive. There was enough left over for lunch another day too.
