Last night I made a lemon drizzle cake to take to my mums for Mother's Day lunch, which was cheap to do but really tasty!
225g self raising flour, 225g butter, 225g caster sugar, 4 eggs, 1 lemons zest for the cake.
For the topping 85g caster sugar and the juice of 1 and a half lemons.
Heat oven to 180C. Beat together the butter and 225g caster sugar until pale and creamy, then add 4 eggs, one at a time, slowly mixing through. Sift in the flour, then add the finely grated zest of 1 lemon and mix until well combined. Line a loaf tin with the mixture and level the top with a spoon.
Bake for 45-50 mins until a thin skewer inserted into the centre of the cake comes out clean.
While the cake is cooling in its tin, mix together the juice of 1 1/2 lemons and 85g caster sugar to make the drizzle.
Prick the warm cake all over with a skewer or fork, then pour over the drizzle – the juice will sink in and the sugar will form a lovely, crisp topping.
Whilst this was cooking I used the oven to make orange biscuits and my brother had got me the oranges so it worked out very cheap! He gets a fruit basket in work and can take what's left at the end of it to take home.
We managed to fit in a visit to my friend and her daughter before heading over to my mums.
It was a lovely day at mums and my daughter spent the whole time playing with their 3 pugs (aren't they cute!)
Someone bought one of my daughters dresses off Gumtree earlier for £5, always happy to sell items on Gumtree due to no selling fees and no trips to the post office!
Yesterday I played hockey which I absolutely love. My team won and the effect of the endorphins and the victory didn't wear off all day...I was walking around with the biggest smile on my face! It's £3 per match, I don't play every week but I do love it, having a hobby is something I recommend xx
